From the sun-swept beaches of Mangalore and Goa and the backwaters of Kerala to the green plains of Tamil Nadu, we sampled food bursting with flavors unique to its region. Our chefs spent days researching traditional recipes and preparation methods from the spoons of different households, and then drew up a menu of dishes designed to transport you to these regions with every mouthful.
