This most contemporary three-year program provides student with multiple options in the culinary field. Students begin with the basics, proceed to intermediate and complete their studies by advanced skills, practical restaurant experience and in-depth study of the cuisines of the world. It helps in the promotion of students’ entrepreneurial spirit, oriented towards learning how to plan, build, promote, run and sustain a flourishing food-related business while gaining the necessary language, mathematics, computer and communication skills. Students gain comprehensive culinary skills as well as build a strong business foundation through:

• Cooking skills and techniques, both at fundamental and at advanced levels, which prepares the graduate for fine-dining kitchens and other food service operations.

• An in-depth examination of international cuisines, including European, the Mediterranean and Asia, as well as nutrition.

• Business skills including marketing and human resource, which prepare students to plan, build, promote and sustain a food-related business.

B.A. in Culinary Arts (BACA) began with a joint-collaboration between the ITC Hotels and the Manipal University. The MoU was signed between ITC Hotels and Manipal University in October 2011 for the professional industry collaboration. Whereas inputs on the contemporary trends and changes in customer preferences are provided by the ITC Hotels, Manipal University extends all academic support and guidance for overall social development.

ITC Hotels being known for their expertise, skill and proficiency in the culinary field have created brands like Bukhara, Dum-Pukht, Pan-Asian and Pavilion. The regular visits of chefs from the ITC Hotels and the visit of BACA Students to the ITC Hotels gives not only a first-hand exposure to the students but also creates a platform to understand customer preferences and the latest trends in hospitality.
