BURMA BURMA, spearheaded by the dynamic duo and childhood friends, Chirag Chhajer & Ankit Gupta is all set to open for goodness on May 9th, 2014. The concept of Burma Burma hails from Gupta's Burmese roots. His mother and her family were brought up in Myanmar and therefore he has been introduced to the heady flavours of Burmese cuisine since an early age. Gupta belongs to a lineage of hoteliers and restaurateurs, hence it only made sense for him to take his mother's delish recipes with his fathers panache for business and form a powerful amalgamation of the two, the result of which is BURMA BURMA. Armed with the concept, design and layout, Gupta approached his childhood friend Chirag, a food enthusiast, and an avid traveller to turn their young dreams of owning a kitsch establishment into reality. Entrepreneurs at an impressionable age of 26 with their first venture all set to open, these young guns have a business minded head on their shoulder and a delicious concept on their taste buds. They firmly believe that the closeness of Burmese flavours to the Indian palate will be the reason behind BURMA BURMA's stupendous success.

Opening in the heart of South Mumbai, Kala Ghoda serves as a pot potpourri of a varied crowd from corporates to artists to travellers and families. The duo affirms that the level of exposure to different cultures and cuisines has increased immensely in the past decade, thereby opening a restaurant that specialises in ONLY Burmese cuisine is bound to garner interest and appreciation as they are confident about their food quality, taste and uniqueness. Burmese food is an amalgamation of Chinese, Indian, Sri Lankan and Thai cuisines. The medium spicy fare ranges from steamed buns (paukse) to parathas (palathas ) to an authentic salad of fermented green tea leaves and even Burmese falooda! The recipes date their origin back to Gupta's kitchen where his aunt, Sumitra Modi and his mother Urmaila Modi would experiment with tastes and flavours that Indians had never heard of. Once Gupta decided on starting out his own venture, he and his chef, Mr Ansab Khan, travelled to Burma to explore the nuances of the cuisine in 2012 for a week . They spent the entire day on all seven days just trying out Burmese food from the street shops, restaurants and his relatives houses. The more they tried, the more convinced they became about the far reaching potential of Burmese cuisine in India.

Myanmar is divided into several regions with Kachin , Mandalay , Rakhine and Shan being the most popular. The migrants from each region carried their recipes and introduced and innovated them in the regions where they migrated , thus Burmese cuisine has evolved and more or less common in all regions. The authenticity of BURMA BURMA can be further highlighted as majority of the ingredients have been hand carried from Myanmar and Thailand due to restrictions and closed importing policy. This has proved to be a major hurdle for Gupta and Chhajer, but their faith in the cuisine and concept has made it happen.

Food is obviously the biggest attraction at Burma Burma. But apart from their never heard of menu, the restaurant designed by architect Minnie Bhatt, possesses a modern day Burmese inspired look and feel. A whole panel and wall that has been especially designed and built by the JJ School of Arts students resembles the pagoda which is often seen in Burmese houses. This wall consists of 9 elements called the "Prayer Wheel" that have also been designed in house and especially for Burma Burma. The ceiling is covered with bright hues of Burmese umbrellas known as "Parasoles." The walls of Burma Burma are decorated with kitsch art that has been made in Burma such as dim sum lacquer ware that is made underground in Burma for over 2 months. Another wall has been specially inscribed with a traditional Burmese prayer that has taken more than 6 months to resemble perfection. The attention to detail by the founders is worth a mention as they have flown chopsticks from Burma as well as sunflower seeds to ensure that every customer gets a glimpse into the culture and tradition of a nation that many Indians are unfamiliar with. The modern feel is complete with services like free wifi, a screen to watch the famed IPL games and teak wood paneling.

Apart from their authentic Burmese menu, BURMA BURMA will also have a Take Away Khowsuey Counter, a Tea Room, a Merchandize Shop with Ready-to-eat Khowsuey packets , Lungi Bags, Burmese artworks, Bubble Tea with Tapioca pearls, and Desserts. The idea is to go beyond just a restaurant and provide Mumbai with a new, wholesome and innovative dining experience that interacts with their customers on various levels. Yet another interesting aspect of BURMA BURMA is that their menu at Fort outlet is all vegetarian. There is nothing religious behind this decision. Their idea to go all veg is consistent with the vegetarian 'healthier" phenomenon that is currently taking over the whole world along with Michelin star restaurants who are choosing to go all veg. Their short term goals in the next few months are to open home delivery, showcase their Ready To Eat Khaosuey packets all over the nation, set up a website in order to retail their Teas, host Burmese cooking classes at BURMA BURMA and eventually open more restaurants Pan India.

The Artist uses his paintings to express his thoughts, similarly via Burma Burma, Gupta and Chhajer want the end consumers to experience Myanmar holistically in terms of Food, Culture and Happiness. Because Food is Happiness and Happiness is Food.
